Production area: Contrada torri, Torano Nuovo (TE).
Ground altitude: 250 m a.s.l.
Soil type: stony calacareo.
Training system: simple curtain row with spurred cordon.
Plant density: 3,400 – 3,700 plants per hectare.
Yield per hectare: 80/90 quintals of grapes.
Harvest: manual with selection of the bunches.
Harvest period: first half of September.
Vinification: crushing and destemming and soft pressing.
Fermentation: in white in stainless steel tanks at a controlled temperature of 16° – 18° C. After fermentation, maturation on its lees for 2 months, with pumping over once a week.
Bottling period: following January.
Serving temperature: 10° – 12° C.
Tasting Notes
Crystal-clear, straw yellow in color with golden reflections, consistent.
On the olfactory examination it is intense, quite complex and of fine quality. The range of perfumes is composed of the following hints: floral, fruity and herbaceous. The sample opens with hints of wild flowers such as hawthorn and daisy, fruity notes reminiscent of yellow-fleshed fruits such as peach and melon, herbaceous closure with hints of walnut husk and tomato leaf. Delicate mineral nuance.
The taste is a full-bodied wine, balanced in its components, with a good persistence reminiscent of a ripe fruit with a slight bitter note.
It is recommended in combination with swordfish and shrimp ravioli.
