Location of vineyards: vineyards in the hills of Ortonovo.
Position and altitude: 100 m above sea level.
Cultivation system: Guyot.
Production per hectare: 90 q.
Period and method of harvest: between September and October, when the balance of the grapes is perfect. Manual harvest in 17/18 kg crates.
Type of fermentation tanks: stainless steel.
Winemaking techniques: soft pressing of the grapes and subsequent fermentation and vinification in stainless steel tanks with automatic thermal conditioning system.
Winemaking temperature: 14°-15° C.
Method and duration of refinement: in stainless steel tanks at a temperature of 10° C with daily batonnage for 3 months.
Tasting notes:
Sample of bright straw yellow color, with light greenish reflections.
The nose releases a scent of aromas of white flowers reminiscent of jasmine and lily of the valley, accompanied by crunchy and fragrant notes of fresh fruits, still not too ripe, very pleasant, including yellow plum, white peach, green apple with aromatic lime citrines. Everything blends with mineral suggestions reminiscent of the brackish of the coast and the aromatic herbs of the Mediterranean scrub such as rosemary and sage.
The taste corresponds to what is highlighted by the sense of smell, the balance is quite good, the wine gives fresh sensations and a marked sapidity that invites you to take a new sip. To be paired with a lime marinated scallop carpaccio.
