Ground altitude: 250 m a.s.l.
Soil type: stony limestone.
Training system: simple curtain row with spurred cordon.
Plant density: 4,000 plants per hectare.
Yield per hectare: 90/100 quintals of grapes.
Harvest: manual with selection of the bunches.
Harvest period: first half of October.
Vinification: crushing and destemming, maceration on the skins for 5-6 days with must at 28/30 ° C, racking.
Fermentation: in stainless steel tanks.
Aging: in Slavonian oak barrels of 30 hectoliters of capacity for 12 months and then in bottle for 3 months.
Serving temperature: 16°-18° C.
Tasting Notes
Sample of intense ruby red color, almost impenetrable, with garnet reflections.
The wine opens with an intense floral note of purple flowers such as violet and wisteria, also persuasive the fruity notes, which recall ripe dark berry fruits such as blackberry, mulberry and cassis, hints of sweet spices such as anise and nutmeg, very elegant aromas of blond pipe tobacco and hints of cigar box, balsamic finish and nuances of officinal herbs.
The wine has an excellent olfactory profile, with interesting, clear and varied aromas. On the palate it is impactful and its persistence is very long. The balance of the soft and hard parts must be perfected with a little refinement but, overall, a great wine.
It is recommended in combination with grilled lamb ribs.
