Vinification: it is a selection of the best Sangiovese grapes of the company. Harvesting is manual; the grapes are de-stemmed and placed in open truncated cone steel tanks, with a semi-automatic fulling system; after 24 hours at 20 ° C the grapes are inoculated with selected indigenous yeasts; the fermentation period is 18 days for Sangiovese and 16 days for Merlot. .
Aging: 16 months mainly in 500 and 700 liter tonneaux. Bottle aging is expected for at least 12 months.
Tasting Notes
Clear sample, purplish red in color with ruby red textures, of good consistency.
On the nose it is complex with floral, fruity, spicy and toasted hints. Hints of violet, followed by an aroma of ripe cherry, over-macerated plum and cassis. Spicy hints of licorice, cloves and caramel with cocoa powder and freshly ground coffee finish.
The sip is rich and opulent. Perfectly balanced sample in its parts, persistent and with an important but silky tannin.
It is recommended in combination with a Florentine steak.
