Age of the vine: 30 years.
Exposure: South, South-East.
Altitude and Soil: clayey limestone of medium hill, rich in stone 200/220 m. s.l.m..
Vinification, maturation and refinement: maceration on the skins with the grafting of selected yeasts for about 8/10 days at a controlled temperature. After maceration, fermentation continues in stainless steel vats. At the end of fermentation, the product continues aging in wood for about three months and in stainless steel tanks for about six months, followed by refining in glass for three months.
Serving temperature: 16°-18° C uncork the bottle 30 minutes before serving.
Tasting Notes
Clear sample, ruby red in color, lively with garnet reflections, consistent.
The olfactory examination highlights hints of red flowers such as violet and pink, wild berries such as blackberry, plum and black cherry, nutmeg, Mediterranean scrub, sweet tobacco and coffee, nail polish.
In the mouth the sip is important, the tannin is well present but not aggressive, the drink is fresh, balanced, persistent. A finish of ripe fruit of undoubted pleasantness remains in the mouth.
It is recommended in combination with a platter of aged cheeses and cured meats.
