Wine: Mazzaferrata
Variety composition: 100% Cabernet Sauvignon.
Denomination: Rosso Colli Toscana Centrale I.G.T.
Alcoholic strength: 13% vol.
Vintage: 2015.
Soil: marly and clayey soils with calcareous sediments.
Training system: partly overturned and partly spurred cordon.
Production area: Tenuta della Villa Bossi, at an altitude of about 300 meters above sea level, in the specialized Pietra Viva vineyard in Sottomonte, with its 2.7 hectares of Cabernet Sauvignon with a southern and hillside exposure.
Harvest and climatic trend: the winter and spring of 2015 were characterized by mild temperatures and frequent rains. The months of September and the first fortnight of October, the harvest period, were perfectly climatic. The thermal excursions have allowed us to have perfect grapes, with great primary aromas that will be found in the wines. The grapes were harvested manually in early October.
Fermentation and vinification: fermentation takes place in vats, at a temperature of 20 ° C, controlled by a refrigeration machine. Then follows the malolactic fermentation in oak barrels.
Aging: rests 12 months in 20 hl Slavonian oak barrels, 12 months in barriques and 24 months in bottle.
Aging potential: 10-25 years depending on the vintage.
First bottling year: 1989.

Tasting Notes
Clear sample, with an intense ruby red color with evident purplish textures, of good consistency.
The nose is a triumph of intense aromas of slightly withered red flowers, followed by notes of berries that tend to compote, hints of sweet spices such as vanilla, nutmeg and cumin. Aromas reminiscent of powdered coffee shears, precious woods and broken chocolate. In the final delicate and fine balsamic nuance.
In the mouth the perfect correspondence between the olfactory examination and the olfactory taste is highlighted, the tannin is precise, silky, the drink is very pleasant. A quality wine with great longevity.
It is recommended in combination with a Wellington fillet.
