Training system: Guyot and spurred to cordon 9000 plants per hectare.
Vinification: manual harvesting of the bunches which macerate separately in vitrified cement tanks at a controlled temperature for about 15 days, after the racking follows the malolactic fermentation, at this point the blend is created by evaluating the percentages of sangiovese and syrah. The Bixbi rests for 12 months in concrete at a low temperature.
Refinement: 1 year in the bottle.
Serving temperature: 16°-17° C.
Tasting Notes
Limpid, purplish red color with light ruby reflections, good consistency.
The sample has a fairly wide variety of scents: floral, fruity and herbaceous. Notes of fresh red flowers, fresh fruit such as berries and plums, nuances of tomato leaf.
Sample with fairly balanced components, with a not accentuated tannin, good freshness, but still intense and persistent and of fine quality.
It is recommended in combination with pork fillet flavored with Mediterranean herbs.
