Plant density: 5,000 – 6,250 plants / ha
Grape yield per hectare: 85 – 90 quintals
Vinification: Soft pressing, fermentation in heat-conditioned stainless steel vats.
Maturation: 10 months in 70% stainless steel tanks and 30% exhausted barriques.
Bottle aging on the lees: From 30 to 40 months on the lees.
Serving temperature: 8°-10° C.
Tasting Notes
In the glass the sample is bright, golden yellow in color with a perfect perlage.
The nose is a scent of citrus, white peach, apple, and freshly picked white flowers.
The sip is perfectly balanced, fresh, with moderate sapidity. A citrus aftertaste and a delicate nuance of broom remain in the mouth.
It is recommended in combination with an amberjack tartare.
