Vinification techniques: The grapes, harvested by hand in boxes, are subjected to de-stemming and soft pressing. Alcoholic fermentation takes place partly at a controlled temperature, in stainless steel vats and ends in the bottle. The result is a dry, sparkling, unfiltered wine. It is a wine that continues to evolve over time as the dead cells of the yeasts degrade and release aromatic substances.
Tasting Notes
Brilliant, straw yellow in color with golden reflections, good perlage.
Quite complex in the variety of its scents: floral, fruity and mineral. Hints of white flowers, slightly ripe yellow-fleshed fruits such as banana, peach and pear, notes of graphite and flint.
The sip is fresh, pleasant, and fairly balanced in its components.
It is recommended in combination with a seafood risotto.
