Soil: calcareous gravelly plateau (60 meters above sea level).
Average age of the vines: 25 years.
Training system: Guyot 5,200 vines / ha.
Production: 50 hl / ha.
Vineyard: cultivated with organic fertilization and integrated phytosanitary defense (as per EU legislation) with the abolition of chemical weeding.
Harvest period: By hand with careful selection of the bunches. September 2017.
Vinification: fermentation in 500 lt French oak barrels (22°-24° C), maturation in the same fermentation containers on the fine deposit for 11 months with frequent bâtonnage. Bottling and bottle aging for at least 12 months.
Tasting Notes
Crystal-clear, straw yellow in color with golden reflections, consistent.
The nose is intense, complex and fine. The bouquet of scents is broad: floral, fruity, fragrant, mineral and spicy. Hints of white flowers such as peony, fruits such as peach and melon, hints of butter, wet gravel, vanilla.
The sip is balanced, intense, persistent and fine.
It is recommended in combination with grilled shellfish.
