Harvest: manual mid-September.
Vinification: the grapes are macerated at a controlled temperature for the first 24 hours at 12° C. Afterwards the temperature is allowed to rise slowly until it reaches 28° C. The duration of maceration is variable. After racking, the grapes are softly pressed.
Aging: in French oak barrels with a capacity ranging from 225 to 3000 liters for about 14 months, after bottling it rests at a controlled temperature for about 6 months.
Serving temperature: 18°-20° C.
Tasting Notes
Clear, intense ruby red color with garnet reflections of good consistency.
The sample, with floral, fruity, spicy and toasted scents, opens with floral notes reminiscent of red rose and geranium; followed by an aroma of ripe blackberry, currant and black cherry fruit; spicy hints of vanilla and black pepper, toasted cocoa and coffee powder finish. Elegant balsamic note.
The olfactory taste test sample is fresh, intense in its aftertaste and persistent, the closure is balsamic and the quality is fine.
It is recommended in combination with a roasted lamb with aromatic herbs.
