Harvest: by hand with careful selection of the bunches.
Vinification: fermentation in 500 lt French oak barrels (22°-24° C), maturation in the same fermentation containers on the fine deposit for 11 months with frequent bâtonnage. Bottling and bottle aging for at least 12 months.
Aging potential: 20 years.
Serving temperature: 11° C.
Tasting Notes
In the glass the sample is crystal-clear, of a very intense straw yellow color with a mantle tending to golden, of good consistency.
On the olfactory examination it is complex in the bouquet of its perfumes. Yellow wild flowers, scent of fruity notes reminiscent of peach, apricot and various tropical fruits, moderately mineral, enriches the range of its aromas with hints of Mediterranean scrub and a nuance of spices.
The sip is fresh, pleasant, its persistence is good, and the taste of olfactory herbs.
Tasted with an island-style sea bass.
