Wine: Schioppettino
Variety composition: 100% Schioppettino.
Denomination: D.O.C. Friuli Colli Orientali.
Alcoholic strength: 13% vol.
Vintage: 2018.
Production area: foothills of the Colli di Spessa and Novacuzzo (Colli Orientali).
Nature of the soil: “Ponca dei Colli Orientali”, marl and sandstone of Eocene origin stratified and formed in the upper part, divided into the foothills.
Density of plants per hectare: 4,000 plants / hectare.
Training system: Double overturned, Guyot.
Harvest: Early October 2017. Manual harvest with careful selection of the grapes in the vineyard.
Vinification: Fermentation in steel. Maceration on the skins for 18-20 days before racking with daily pumping over. Pressing follows.
Aging and refinement: 18 months, 1/3 in barrique, 1/3 in French oak tonneaux, 1/3 in large Slavonian oak barrels. After blending, the wine is further refined in the bottle for another 6 months.
Serving temperature: 16°-18° C.

Tasting Notes
Limpid, intense ruby ​​red color with very slight, almost imperceptible, garnet textures, consistent.
On the olfactory examination it is intense, fine and with a wide and complex range of scents. Aromas reminiscent of a potpourri of red flowers, intertwined with hints of ripe red fruit. By further oxygenating the sample, intense hints of sweet spices and balsamic scents of Mediterranean scrub are released. The closure is with a hint of freshly ground black pepper.
The taste is well balanced in its components, soft, with a non-invasive and well-polished tannic texture. A wine destined to evolve further, but already now with a very intense olfactory persistence, ripe fruit and precious spices.
A wine to drink, but also to “forget” a few years in the cellar, in order to fully appreciate its evolution.
It is recommended in combination with a rabbit in porchetta with black olives.
