Variety composition: 100% Lambrusco di Sorbara.
Alcoholic strength: 11% vol.
Vintage: 2020.
Classification: Lambrusco di Sorbara D.O.C. (Denomination of Controlled Origin).
Soil: loose, mostly silty, and sandy, fresh and with a good presence of organic substances.
Vineyard: “Cristo” vineyard (15 hectares).
Harvest period: mid-September.
Yield per hectare: 120 q / ha.
Vinification: free-run must, soft pressing, without maceration, alcoholic fermentation, natural refermentation in the bottle on indigenous yeasts. Refinement in the bottle. Only bottling at the beginning of March
Serving temperature: 12°-13° C.
Tasting Notes
The sample is pale pink, salmon, limpid, with a very light, almost imperceptible matter in suspension, due to the type of wine. The foam is rich and the perlage is persistent and numerous.
The scent is intense, reminiscent of aromas of red fruit, citrus and notes of rose, with a mineral finish.
The sip is fresh, enveloping, where what is perceived on the nose finds correspondence. In the mouth, hints of pomegranate and green apple persist with a final note of pink grapefruit. It is recommended in combination with crescentine with cold cuts and fresh cheeses.
