Classification: Lambrusco di Sorbara DOC “Cru” dry sparkling, selection.
Soil: loose, mostly silty, sandy, fresh and with a good presence of organic substances
Vineyard: “Cristo” vineyard (15 hectares).
Harvest period: mid-September.
Yield per hectare: 120 q/ha.
Vinification: free-run must, without maceration, alcoholic fermentation and refermentation for at least 3 months with the Martinotti method.
Serving temperature: 8°-10° C.
Tasting notes
Sample with a pale pink color, almost powder, with a fine and persistent perlage.
On the nose, notes of fresh flowers such as jasmine and hawthorn stand out, fruity hints reminiscent of wild berries: currants, blackberries and strawberries. Vanilla nuances in the finish.
The taste gives a fresh sip, with an important acidity. Fruity notes prevail, which are persistent. Balanced sample in its components. It is recommended in combination with swordfish tartare.
