Method of harvest: manual grapes and selection of bunches and berries on sorting tables
Vinification: destemming of the bunches and soft pressing of the grapes. Pre-fermentation cryomaceration. Fermentation temperature control. Maceration on the skins for about 15 days.
Refinement and maturation: from 10 to 14 months in 1/3 new French Allier-Vosge oak barriques, medium toasting.
Bottling: by gravity with compensation in a nitrogen atmosphere
Rest in the bottle: 7 months before being placed on the market, in controlled temperature and humidity environments.
Serving temperature: 16° -18° C.
Tasting Notes:
Clear, intense ruby red color, almost impenetrable.
On the olfactory examination the sample opens with floral notes reminiscent of a pot pourri of red flowers, followed by hints of red and dark berries such as currant, blackberry, blueberry and strawberries. Closing with vanilla nuances.
In the mouth the sample shows a good tannic texture, important and well polished. The sip is fresh, well balanced in the various components, the vanilla aftertaste remains at the end.
