Vinification: according to tradition, in white, with soft pressing and fermentation at a controlled temperature in steel.
Aging: in steel with periodic batonnage and then in the bottle. Stored in a suitable environment it ages well in the bottle for several years.
Serving temperature: 7° – 9° C.
Tasting Notes
Crystalline, with an intense straw yellow color, with golden reflections, of moderate consistency.
On the olfactory examination it is quite complex with floral, fruity and mineral scents. Opening with intense notes of yellow flowers reminiscent of dandelion and narcissus, followed by persuasive notes of fresh fruits that refer to tropical fruit such as papaya and mango, but also hints of melon and apricot, tantalizing mineral and Mediterranean herbs undertones close the olfactory bouquet.
The sample, with very pleasant aromas, is also confirmed in the tasting, a good part of the taste olfactory hardness with a pleasant mention for the savory note that invites you to a subsequent taste, intense and persistent with a fine taste of olfactory quality.
It is recommended in combination with homemade tagliolini with white rabbit ragu flavored with Mediterranean herbs.
