Varietal composition: 60% Cabernet Sauvignon, 30% Carmenère, 10% Merlot.
Alcoholic strength: 13% vol.
Vintage: 2015.
Classification: Vineyards of the Dolomites I.G.T. (Typical Geographical Indication).
Vinification: spontaneous fermentation in small concrete tanks for about 15/18 days with various daily pumping over and delestage.
Aging: 24 months in first, second and third passage French oak barriques
Resistance to aging: 30 years and more.
Tasting Notes
Clear, garnet red with purple reflections, consistent.
On the nose the sample is: vinous, floral, fruity and toasted.
The wine opens with elegant cellar aromas, followed by aromas of laurel and rosemary, the floral part is intense where notes of geranium and carnation stand out, fruity scent of plum and black cherry, accompanied by toasting of cigar boxes, closes with a balsamic finish pine.
Pleasant sip, fairly balanced, with good persistence with a balsamic aftertaste.
It is recommended in combination with a dish of polenta with crispy speck and fontina.
