Fermentation temperature: 16°-17° C.
Technical information: the grapes, harvested by hand in crates, are de-stemmed and subjected to soft pressing. Fermentation takes place in stainless steel vats at a controlled temperature. At the end of fermentation, the wine rests on the noble lees for about 20-30 days and is subjected to batonnage every day: this allows the extraction of more intense aromas and the protection of aromas from oxidative processes. The wine is then aged for about 3-5 months in steel and then bottled.

Tasting Notes
Crystalline, straw yellow in color tending to golden, consistent.
Sample with a large and complex bouquet of hints: floral, fruity, fragrant, mineral and herbaceous. Hints of yellow flowers such as calla, broom and yellow rose, fruits such as peach and apricot, hints of citrus, bread crust, flint, cut grass, tomato leaf.
The sample on the sip is fresh, with a good acidic shoulder. Perfectly balanced between its components, it is intense and very persistent with a citrus aftertaste. Quality is fine.
It is recommended in combination with a Catalan of prawns.
