Fermentation temperature: 25° -28° C.
Skin contact: 10-15 days.
Aging: 7-10 in stainless steel vats, 3 months in the bottle before consumption.
Technical information: the grapes harvested in boxes are then destemmed and fermented in stainless steel vats, at a controlled temperature for 10-15 days. After racking, the wine is left to refine in steel vats for at least 7-10 months, after which it is bottled.
Tasting Notes
Clear, bright ruby red color with light garnet color textures, consistent.
Sample with complex scents: floral, fruity, spicy and toasted. Hints of red flowers such as red rose and peony, berries such as currants, cherry, corn and blackberry, vanilla curry and black pepper, ground coffee and tobacco.
The taste is sapid, balanced in its components, intense, with a good persistence, of fine quality.
It is recommended in combination with a larded fillet.
