Vinification: according to tradition, in white, with soft pressing and fermentation at a controlled temperature.
Aging: in oak and chestnut barrels for about 4 years, kept overflowing to allow the characteristic veil of “Flor” yeasts which generates the unmistakable hints of Vernaccia di Oristano.
Serving temperature: 8°-10° C if as an aperitif, 15° C as a dessert.
Tasting Notes
Crystalline, golden yellow in color with amber reflections, consistent.
On the nose the sample results from a complex bouquet: floral, fruity and ethereal. Opening with floral notes reminiscent of a pot pourri of withered yellow flowers, followed by fruity hints of peach and almond, ethereal nuances of enamel.
The sip is important, as is its tannin. Quite balanced in its parts, it is intense, persistent and of fine quality.
It is recommended in combination with a spiced fish soup.
