Vinification: destemming, fermentation with indigenous yeasts and maceration in stainless steel tanks for 14 days at 24° C, racking, short aging in concrete tanks and in bottles.
Serving temperature: 16°-18°C.
Tasting Notes
Limpid, very intense ruby red color, of good consistency.
On the nose the sample gives hints of slightly withered red flowers, followed with ripe dark berries that remind the blackberry, the blueberry accompanied by a nuance of cherry in spirit. Close the wide range of the notes of sweet spices like cinnamon and cardamom and balsamic hints of Mediterranean scrub.
The sip is rich, with a good tannic texture. Overall balanced in its parts, it offs a pleasant freshness. Sapid and persistent final with a mature fruit aftertaste.
It is recommended in combination with a stewed wild boar plate.
