Varietal composition: Sangiovese and historical traditional blends.
Denomination: Chianti Classico Riserva D.O.C.G. Biological.
Alcoholic strength: 14.5% vol.
Vintage: 2017.
Production area: Gaiole in Chianti – Castelnuovo Berardenga.
Vineyard: Chianti Classico.
Altitude: 260 – 370 m. s.l.m.
Exposure: South, South-West.
Soil: medium mixture rich in skeleton.
Training system: Guyot.
Density (plants per hectare): 5500 – 6600.
Harvesting method: manual.
Vinification: Natural fermentation with indigenous yeasts, 40 days maceration on the skins, fulling.
Aging: 24 months in barrels of various sizes and French oak barriques.
Serving temperature: 16 ° -18 ° C.
Production: 7,200.
Vintage 2017: after an extremely dry winter and a spring frost that fortunately only touched us, summer was exceptionally hot and little rain. Given the extreme drought, the damage to the ungulates was significant. Therefore harvest with small quantities. Excellent quality, on the other hand, thanks to the careful management of the foliage and the exceptional resistance to drought of our soils in Monti, due to both the good clay content and the many years of Bio Organic management with grassing, green manuring and composting that make the soil more receptive to rain and less likely to dry out in prolonged drought conditions.
Harvest: 18-27 September.

Tasting Notes
In the glass “Cultus 2017” is limpid, almost brilliant, of a very intense ruby red color with slight nuances of garnet color, consistent.
The nose reveals aromas of red, rose and peony flower petals. Addictive notes of small red berries, nuances of cherries in alcohol follow; balsamic and spicy nuances complete the range of perfumes. Aftertaste reminiscent of licorice root.
On the palate, an important, but not invasive, tannic texture emerges. Warm and enveloping the sip, balanced in its components, the lively freshness anticipates a long and persistent finish of ripe fruit. Elegant and fine quality sample.
It is recommended in combination with baked rabbit with potatoes and mushrooms.
