Vinification, Maturation, Refinement: short contact on the skins, after cleaning the must obtained from soft pressing and the grafting of selected yeasts, ferments in stainless steel vats at a constant temperature of 15 °, after fermentation, refinement continues on the yeasts for a few months, followed by refinement in glass.
Serving temperature: 10°-12° C.
Tasting Notes
Crystal-clear, bright greenish yellow color with straw reflections, consistent.
The range of aromas is intense and complex: floral, fragrant, fruity. herbaceous and mineral. Hints of flowers such as mimosa and daisy, yellow-fleshed fruits such as pear, golden apple and apricot, hints of bread crust, Mediterranean scrub, wet gravel.
Fairly balanced sample in its components. The sip is intense, persistent and fine with an aftertaste of Mediterranean scrub.
It is recommended in combination with spaghetti with calamari and clams.
