Soil: calcareous marl with sandy parts of medium hill, rich in skeleton.
Vinification, maturation and refinement: maceration of the skins with the grafting of selected yeasts for about 8/10 days at controlled temperatures. After maceration, fermentation continues in stainless steel vats. At the end of fermentation, the product continues its refinement in stainless steel tanks, and subsequent refinement in the bottle.
Serving temperature: serve at 14°-16 °, uncorking the bottle just before serving.
Tasting Notes
Limpid, intense garnet red color with light orange textures, quite consistent.
On the olfactory examination the sample is intense, complex in the variety of its scents: floral, fruity, spicy and toasted. Elegant hints of slightly withered red flowers that recall the scents of ancient rose, notes of ripe red berries that tend to cherry, durone and wild strawberry jam, hints of sweet spices reminiscent of cinnamon and star anise with undertones toasted pipe tobacco and oak wood.
The sip confirms what is described on the nose. Balanced sample in its parts with an important and well-polished tannin. a wine with fine and elegant aromas with good intensity and taste olfactory persistence. Liquid emotions.
It is recommended in combination with a spiced pork tenderloin with plum filling.
