Training: Guyot.
Exposure: S, SW – 80% slope.
Soil: Sandy-frank and partly sandy-sandy with a low depth (less than 50 cm) and an abundance of skeleton.
Cultivation Operations: Partly mechanical and partly manual, with techniques allowed only in organic farming. The fertilizations are carried out with the addition of organic substances (manure).
Planting year: 2003
Harvest: Between the end of October and the beginning of November.
Vinification: In steel with destemmed grapes, without adding selected yeasts, maceration with the skins for 30/40 days with three punching downs a day at a controlled temperature.
Aging: In French barriques for 12/15 months, 15/18 months in the bottle.
Bottling: April / May.
Serving temperature: 16°-18° C.
Tasting Notes
Limpid, intense ruby red color with light garnet color textures, consistent.
Sample of fine quality and quite complex in the bouquet of its scents. Moderate floral notes, a scent of ripe red fruit tending to jam, in particular of morello cherry. Closing with delicate notes of sweet spices and a nuance of undergrowth.
On the palate the tannin is well defined and elegant, the persistence of the olfactory taste which recalls hints of ripe fruit is important. Good balance in its components.
Tried with a platter of long-aged mixed cheeses.
