Period and method of harvest: late harvest. manual harvest in 17/18 kg crates.
Type of fermentation tanks: stainless steel.
Winemaking techniques: alcoholic fermentation on the eggs at a controlled temperature in stainless steel, subsequent malolactic fermentation and subsequent aging on the noble lees until the month of March.
Winemaking temperature: 15°-17° C.
Method and duration of refinement: in stainless steel tanks at a temperature of 10° C with daily batonnage.
Tasting Notes
Crystal-clear, with an intense, consistent golden mantle.
On the olfactory examination the sample results from the wide and beautifully outlined range of aromas. Hints of broom flowers, accompanied by a scent of ripe fruit reminiscent of yellow peach, and a basket of tropical fruits. Hints of spice and star anise finish.
In the mouth it is fresh, balanced in its components. It confers softness and freshness on the palate, a good persistence of the olfactory taste that recalls Mediterranean herbs and hints of papaya.
Tasted with a Catalan of shellfish, a very interesting combination.
