Tasting Notes
Limpid, very intense ruby red color with light violet reflections, consistent.
On the olfactory examination the sample gives a bouquet of varied, intense and fine quality aromas. It opens with floral notes reminiscent of lavender and geranium, followed by an effluvium of fruity notes of morello cherry, dehydrated plum, and small dark berries. A note of leather and vanilla completes the exam.
The sip is fresh, well balanced in its components. The tannin is smooth and soft. Good persistence of taste olfactory that gives an aftertaste of ripe fruit accompanied by a pleasant mineral sensation.
Tried in combination with rabbit in porchetta.
