Chiara and Lorenzo Iacoponi are the owners of Heirs of the Popes, a young winery based in Monte Caprati, in the hills of the Castelli Romani.
A passion handed down from the grandfather that today allows producers to produce quality wines.
The entire processing phase, from pruning to managing the greenery up to the harvest, is done by hand, allowing the concentration of nutrients, sugars and polyphenols in the bunches.
The alcoholic fermentation of the musts, obtained by soft pressing, is thermo-controlled. The white wine is aged on fine lees until December, while the red follows an aging of about one year.
